Sweet Nation: Ghevar, Rajasthan

No festival or celebration in Rajasthan is complete without ghevar

A disc-shaped sweet made with flour, ghevar brings with its sugar-syrup dunked sweetness the very essence of joyous festivities in Gujarat. Although its origins lie in the desert state, it is also found in Haryana, Gujarat, Uttar Pradesh and Madhya Pradesh – all states adjoining Rajasthan.

The greatness of the sweet lies in the simplicity of the ingredients used to make it, predominantly refined flour, ghee and sugar, but, over the years, there have been additions of mawa (thickened milk) and malai (milk cream) to raise the levels of decadence to new heights.
